🇬🇪 What everyone should try

  • Adjarian khachapuri — a boat of dough with cheese, an egg and butter. The dish of this region; one is enough for two.
  • Khinkali — dumplings with minced meat and broth inside. Eaten by hand, held by the tail; the tails stay on the plate.
  • Imeretian khachapuri — a round flatbread with cheese inside, more familiar and lighter than the Adjarian one.
  • Achma — a layered cheese pie, Adjara's cousin of lasagne. Served hot.
  • Borano — an Adjarian dish of sulguni melted in butter. Rich, simple and very local.
  • Sinori — Adjarian rolls of thin dough with nadugi cheese and mint.
  • Pkhali — a cold starter of greens or vegetables with walnuts. Perfect in the heat.
  • Lobio in ketsi — beans baked in a clay pan, served with mchadi and pickles.
  • Shkmeruli — chicken in a garlic cream sauce. Order it for two and mop up the sauce with bread.
  • Chakapuli — veal or lamb stewed with tarragon and sour plums, a spring classic.
  • Ojakhuri — meat and potatoes on a ketsi pan, the most straightforward home-style order.
  • Churchkhela — nuts in thickened grape juice. Buy it at the market rather than in souvenir shops: fresher and cheaper.
  • Matsoni and nadugi — soured milk and fresh cheese with cream, bought at the market for breakfast.
